BBQ Pulled Pork - Guest Recipe from Gigi
Ingredients:
- Boneless pork tenderloin (approx. 5lb for 4 people)
- One purple onion
- BBQ seasoning
- Garlic Salt
- Sweet Baby Ray's Honey BBQ sauce (2 8 oz. bottles)
- Spray crock pot with pam
- Cut up purple onion and put in crock pot
- Season your pork with the BBQ seasoning and garlic salt
4. Put pork in crock pot for at least 6 hours on high (no more than 12 hours)
5. At some point around half way through you can rearrange the tenderloins in the pot but not necessary if you're not able to.
6. At about 6 hours, try to pull apart the meat like so:
If you are able to pull it apart like the video above, you will know it is done. Continue pulling all of it apart.
7. Put an entire bottle of Sweet Baby Ray's Honey BBQ Sauce on your pork (or as much as you'd like).
8. Eat right away or put in fridge to marinate all night or even for a couple of days. To reheat, place in the oven for approx 15-20 minutes on 350 degrees.
9. The second bottle of BBQ sauce can be used by your family or guests at the table if they need extra sauce. :)

Pork Roast
Buying tip: "Center Cut Boneless Pork Roast" with strings around it
1. Spray pan with Pam
2. Bathe the Pork Roast in Canola Oil (pour it in and roll it around) - we want our herbs to stick.
3. Put on Garlic Salt all over
4. Put Thyme, Sage & Rosemary all over & rub it in, like so:
5. Top it off with more Garlic Salt
6. Top it off with some pepper
7. Put more oil in pan to soak up the spices
8. Put pork in oven at 350, measure it at 40
Meat should be 145 degrees inside when done
Asparagus
Buying tip: young (small & thin)
1. Rinse it
2. Cut off half & place in skillet with just a little water
3. Cover and cook for 20-25 minutes - add water as needed
4. Taste one and make sure it isn't tough
5. Once done, drizzle olive oil on it and salt if desired.

Brown Sugar Butternut Squash
Buying tip: the smaller the better
Preheat oven to 350-375
Microwave for three minutes one at a time in order to cut them
Cut in half & cut off top/stem
Scoop seeds out like a pumpkin
Fill pan with half an inch of water
Lay them face down in the pan & put in oven
30 - 45 minutes
Test bottoms and make sure fork goes straight in
Flip over if fork goes straight in
Caress squash with stick of butter so it is melting into the squash
Cut chunks of butter to put in the cavities
Fill cavities with Brown Sugar, like so:
Place back in oven for approx. 15 minutes

Chick Pea Salad
3 Cans of Goya Chick Peas
2 Large Chopped Red Peppers
1 Chopped Red Onion
4 Chopped Cucumbers
6 Tablespoons Balsamic Vinegar
12 Tablespoons Olive Oil
1 teaspoon garlic powder
1 tablespoon oregano
Salt and pepper to taste
Toss all ingredients together, chill and serve.

Super Yummy Pasta Salad
Ingredients
2 boxes Suddenly Salad pasta salad mix (comes with seasoning and pasta)
2 - 3 Tomatoes
1/2 cup chopped green olives
1/2 cup chopped red onion
2 chopped cucumbers
5 tablespoons olive oil
6 tablespoons water
1/2 can black olives
1 teaspoon Cavender's Greek seasoning
